French Jam Making | A talk by David Bruel | in English
David is a professional jam maker from Auvergne, France, He settled in Pondicherry four years ago. After studying in an agricultural high school and then in a sports university in Montpelier, He discovered India in 2015 and married a young Indian woman, Pamela, with whom he had a little boy, Zian. Initially, He wanted to open a coffee shop in Pondicherry, but he finally decided to set up a jam-making business, which was less costly in terms of investment. In the South of India, the abundance of fruits all year round allows him to favor short circuits, socially equitable and ecologically sustainable. Avoiding pesticides, citric acid, gelling agent and any other chemical product, he prefers to use ripe fruits, pure sugar and spices. His talent is to combine the art of French gastronomy with local fruits and Indian spices. This is how he successfully combines sweet and savory. Today, He works with two part-time employees. As the pace of orders accelerates, He has plans to expand his business and export more throughout India. You can find his jams in many stores, restaurants, creperies and hotels in Pondicherry and Chennai.
